Pit Beef is a Baltimore, Maryland barbecue classic made from top round roast grilled directly over hot charcoal until charred and smoky on the outside while staying tender and rare inside. The beef is shaved into thin ribbons and piled high on a Kaiser roll, traditionally topped with sharp horseradish βTigerβ sauce and raw white onions, with optional BBQ sauce. Originating in East Baltimore in the 1970s, this roadside favorite is known for its bold flavor, crusty exterior, and no-frills authenticity.
